Zuppa Toscana

My family and I love crock pot meals, especially on busy days. This
recipe was shared by my church friend and now we make it at least oncea month. This recipe worked wonders for my little sister, Ellie, who
does not like spinach.

Mild Italian Sausage
1 pkg. Kielbasa Italian Sausage
Bacon Bits
2 or 3 Onions
1 or 2 cartons Heavy Whipping Cream
Chicken Broth
Potatoes or Cauliflower
Kale or Spinach
5 to 8 Garlic Cloves
Garlic Powder
Crushed Red Pepper Flakes

Dump the bacon bits,  heavy whipping cream and chicken broth in the
crock pot. Chop up all the onions and garlic cloves and saute them
with a little bit of olive oil. When they are finished, add it to
the crock pot. Cook the sausages then add to the crock pot. Add as
much of the pepper flakes as your family is comfortable with.
We like ours spicy, so we add a good bit. Towards the end, chop up your
potatoes and cook it in a separate pot. Once they are done, add it
to the crock pot. If you are using kale, add to the crock
pot right away and if you plan to use spinach add it towards the end.

I usually do not measure so you will have to eye everything.  It’s so
mmy and creamy especially in the winter during cold and bitter days. Enjoy!

Peanut Butter Pie

This is my daddy's favorite dessert and we make for him for his Birthday, Fathers Day and on Christmas and Thanksgiving. He loves it!

Here is the recipe:

2 Oreo Pie Crusts

1/2 Block Cream Cheese

1 Cup Peanut Butter

1 Cup Confectionary Sugar

2 Tbsp. Milk

18 oz. Cool Whip

Mix all the ingredients together and top it with cool whip. Let it chill for a few hours in the fridge. We put chocolate chips or sometimes we shread a sweet Hershey bar and put it on top of the cool whip. Enjoy your pie!

Chicken and Squash Casserole - Large Family Style

If any of you have a fresh garden and are growing squash and zuchinni and need more recipes for them, this is a recipe that my family of 10 enjoys:

Chicken and Squash Casserole

6 yellow squash
2 med. onion chopped
2 sticks of butter (melted)
1 extra large (26 oz) can of cream of chicken soup
8 oz. sour cream
2 packages stuffing mix
2 large cooked chicken breast
16 oz. of peas or carrots
2 tsp. garlic powder
salt and pepper to taste

Saute onion in small amount of butter. Add soup, sour cream, squash, chicken, seasonings, and veggies. Melt butter in a mixing bowl then add stuffing mix and blend it. Layer stuffing and squash mixture reserving stuffing mixture to sprinkle on top. Bake at 350 degrees for 30 minutes.
